Basil: Fresh from a market.
Salt: fine sea salt.
Cheese: fresh mozzarella, parmigiano reggiano, & fresh mozzarella block from a market.
Break into small 1 inch pieces with your hands. Store in a plastic bag wrapped in a wet paper towel and lightly salted. Keep in the refrigerator until ready to put the pizza in the oven.
