Ingredients
Pita: buy fresh thick pita bread

Vegetables: diced onions, diced cucumbers, diced jalapeños, shredded iceberg lettuce, diced tomatoes
Falafel: buy fresh (Jerry’s Fruit Market and Bakery best in Michigan)
Recipe: 1.5 cups dry chickpea (soaked over night), 1/2 onion, 1 cup cilantro, 1.5 cup parsley, 2-3 small/medium green chiles, 2-3 garlic cloves, 1.5 tsp cumin, 3/4 tsp salt, & 1.5 tsp coriander, 3/4 tsp black pepper & 3/4 tsp baking soda, 1 tbsp chickpea flour
Sauces: sriracha, green chutney, tahini, tzatziki, garlic sauce
Cut all the veggies into small pieces.
Falafel Patty
Add chickpea, onion, cilantro, parsley, green chiles, garlic cloves,- roughly chopped up - into a food processor. Add 1-2 tbsp water.
Make sure you don’t use canned chickpea.
Blend until finely ground.
Add in cumin, salt, coriander powder, black pepper, baking soda, & chickpea flour and mix with your hand.
Scoop with an ice cream scooper of similar size throughout, around 2 inches in diameter.
Will make around 10 falafels based on size
Don’t squeeze out excess water.
Spray the tray in the air fryer and place the falafel patties on It. Bake at 370 degrees F for 13 min, flip halfway. Or fry in oil (~350 degrees F)
Falafel Pita
Warm up the pita in the oven. (350 degrees for 3 minutes)
Cut the pita in half.
Cut the falafel patties into smaller pieces & combine them with the cut veggies.
Add some green chutney, sriracha, garlic sauce, tzatziki, and tahini and mix.
Add everything to the middle of the pita and have extra sauce on the side to dip & jalapeños chips Meijer brand is the only good one. (0% traditional but this w ketchup is good)
