Paneer Stir Fry Wrap

Ingredients

1 cup sliced bell pepper, 1 cup sliced onion, 4 cups paneer, 2 cups sliced tomatoes, 2 minced garlic cloves, 1-2 tbsp tomato paste, 1 tbsp turmeric powder, 3/4 tbsp salt, 1/2 tbsp ginger, 1 tbsp coriander powder, 1 tbsp chili powder, 1-2 tbsp garam masala, 1.5 cups water, 1 tbsp dried fenugreek

Wrap: almond flour tortilla wrap, flour tortilla, or naan, diced red onion, garlic thecha chutney, green chutney, cilantro, paneer stir fry

  1. Start off by cutting all the vegetables.

Stir Fry Paneer - 25 min

  1. Add 1/4 cup neutral oil to a large pan on med heat.

  2. Once the oil has heated up, add in 1 cup onions & 1 cup bell peppers. Let It saute for 5-10 min. Add in 2 cloves minced garlic.

  3. Low/med heat: Add 1 tbsp turmeric, 3/4 tbsp salt, 2 cups tomatoes, 1/2 tbsp ginger, 1-2 tbsp tomato paste, 1 tbsp coriander powder, 1 tbsp chili powder, &1 tbsp garam masala.

  4. Mix & cook for 5 min.

  5. Add in desired amount of paneer ~ 3-4 cups long rectangular shaped paneer blocks.

  6. Add in 1.5 cups water & 1 tbsp dried fenugreek

  7. Adjust seasoning according to taste.

  8. Cook for another 5 min med/high heat until It forms into a gravy - to eat with naan.

    1. Cook until excess liquid is gone - if you want It for a wrap

Wrap

  1. Warm up a tortilla.

  2. Add garlic thecha, paneer stir fry, diced red onions, green chutney, & cilantro.

  3. Add It to a pan med heat w/ some oil.

  4. Cook on both sides until crispy!
