Stir Fry Lo Mein

Time: 30 min

Serving size: 3

Ingredients

Veggies: 1/4 cup of the following veggies: shredded cabbage, sliced carrots, sliced red onions & bell peppers, mushrooms, steamed broccolini, 2 tbsp grated garlic

Noodles: Lo Mein or Stir fry rice noodles

Sauces: sesame oil, dark & light soy sauce, sriracha, sweet & sour sauce (Kikkoman)

  1. Start off by adding the water & salt into a pot on high heat.

Stir Fry Veggies - 15 min

  1. Cut up vegetables.

  2. Cut the broccolini into smaller pieces and blanch - for 30 sec in boiling water, followed by a cold ice bath.

  3. Wash the mushrooms and sauté in the pan on med/high heat in oil, then add 2 tsp lemon juice once browned.

  4. Sauté until most of the liquid has cooked off.

  5. Add in the rest of the veggies with 2/3 tbsp oil on medium-high heat.

  6. Add in minced garlic.

  7. Sauté until translucent or slightly brown - stir often.

Cook Noodles - 5 min

  1. Once the water has boiled, add 3 servings of the noodles.

  2. Drain & wash/soak noodles in cold water once the noodles are al dente.

Stir Fry Noodles - Sweet & Spicy - 7 min

  1. Add the rinsed noodles to the vegetables - on medium heat with 2 more tbsp neutral oil.

  2. 2 tbsp sweet & sour sauce, & 4 tbsp light soy sauce & 1 tbsp dark soy sauce for color. Add sriracha to taste.

  3. Switch to high heat.

  4. Taste the noodles & adjust the sauces accordingly.

  5. Add the noodles to a plate, top with some Manchurian or fried rice & enjoy.
