Taquitos - air fryer recipe

Time: 1 hour

Serving size: 4

Ingredients

Beans: 2.5 cups dehydrated refried beans, 3-4 cups water, 1.5 tbsp neutral oil, 1/2 diced white onion, 1/2 diced jalapeño, 2 tbsp taco seasoning (kroger fajita mix is good) , 2 tbsp taco bell fire sauce, 3-4 tbsp cabot habanero cheese

Salsa: 1 diced tomato, 1/3 diced red onion, 1 tbsp cilantro, lime + salt to taste

Fresh Guacamole: 1 small garlic clove, 2 avocados, lime + salt to taste, 2 tbsp diced tomato, 2 tbsp diced red onion, 1 tbsp diced jalapeño, 1 tbsp cilantro

Taquito: 12 mini flour tortillas, cabot habanero cheese, neutral oil, air fryer, shredded lettuce

  1. Cut up all the ingredients.

Beans

  1. In a pot, add in the oil & onions + jalapeños on low/med heat. Cook until translucent.

  2. Add in dehydrated refried beans + water + taco seasoning. Start with 3-3.5 cups water & stir often.

  3. Cook until the beans rehydrate & the mixture has thickened. It should be a runny consistency, add more water to your preferred consistency if the beans dry up. Can switch It to med heat to cook off excess water if needed.

  4. Then add in fire taco bell sauce & habanero cheese. Add more seasoning based on taste.

Guacamole

  1. In a mortar pestle: add in the garlic first, then mash up the avocados & add in the rest of the ingredients.

  2. Season to taste with salt & fresh lime. Store in fridge until ready to eat.

Salsa

  1. Add all salsa ingredients into a food processor and slightly blend for a couple seconds. It should still have chunky tomatoes.

Taquito

  1. Once everything is prepped: assemble taquitos.

  2. Add the runny refried beans into the center path of the tortilla with some mexican blend & habanero cheese.

  3. Roll It up tightly and lightly brush the outside with oil.

  4. Add into the air fryer at 400 degrees for 3-4 min until golden brown, flip & repeat. Spray extra if taquitos get dry.

  5. Repeat for the rest of the tortillas.

  6. Spread the poblano sauce on the bottom on the plate, add 3 taquitos on top.

  7. Drizzle more poblano sauce, fresh salsa, fire hot sauce. Serve with fresh guac, cilantro & shredded lettuce. & enjoy :)
